Desde 1990 he realizado trabajos de investigación básica y aplicada en el área de Ciencia y Tecnología de Alimentos, particularmente en la preservación de alimentos de origen vegetal, incluyendo en ello la caracterización química y ultraestructural de la matriz, en el desarrollo de materiales (películas comestibles) portadores de preservadores antioxidantes naturales para obtener interfaces activas, y en la extracción y caracterización química y funcional de polisac... Desde 1990 he realizado trabajos de investigación básica y aplicada en el área de Ciencia y Tecnología de Alimentos, particularmente en la preservación de alimentos de origen vegetal, incluyendo en ello la caracterización química y ultraestructural de la matriz, en el desarrollo de materiales (películas comestibles) portadores de preservadores antioxidantes naturales para obtener interfaces activas, y en la extracción y caracterización química y funcional de polisacáridos y antioxidantes aislados de residuos de la industrialización de vegetales, para ser aplicados como ingredientes y aditivos útiles en la formulación de alimentos, o como agentes espesantes y/o gelificantes, o como fibra dietaria. Se ha evaluado también la actividad biológica antiviral, la digestibilidad in vitro. He ganado experiencia en la caracterización química de polisacáridos de pared celular, en procedimientos extractivos y estudios reológico-texturales, en la compartimentalización de antioxidantes en matrices.
