I) Control de fitopatógenos y extensión de la vida postcosecha de frutas mediante nuevas técnicas de procesamiento basadas en agentes físicos, químicos y/o biológicos. II) Desarrollo de productos de humedad baja e intermedia a base de frutas. III) Análisis microbiológicos y de diferentes parámetros de calidad en alimentos (propiedades reológicas, ópticas y antioxidantes).
