Caracterización fisicoquímica y determinación de propiedades tecnofuncionales de alimentos. Cinética de secado de frutas y hortalizas regionales. Diseño de sistemas de secado. Proceso de rehidratado de alimentos secos. Extracción de pectinas en residuos industriales y aplicación de las mismas en otros alimentos. Optimización y cinética de los procesos de extracción de pectinas y otros productos. Extracción y cuantificación de polifenoles. Obtención de harinas alternativas, aplicaciones en panificados y análisis de aceptabilidad de los productos.
