Experiencia en determinación de composición proximal de alimentos, caracterización fisicoquímica y evaluación de propiedades tecnofuncionales. Especialista en cinética y diseño de procesos de secado de frutas y hortalizas, así como en el análisis del rehidratado de productos deshidratados. Desarrolla investigaciones sobre la extracción de pectinas a partir de residuos agroindustriales y su aplicación en alimentos funcionales, incluyendo la optimización y modelado cinético de procesos de extracción. Amplia experiencia en la extracción y cuantificación de polifenoles, así como en la obtención de harinas alternativas, su uso en panificados y el análisis de aceptabilidad sensorial. Maneja herramientas para el procesamiento y análisis de datos, con dominio de softwares como Matlab, MiniTab, InfoStat, Octave, ImageJ y Excel. *Information provided by the agent in SIGEVA
