Mi campo principal de investigación es la Tecnología de Alimentos. Los distintos proyectos que he dirigido desde el comienzo de mi carrera han tenido como fin reemplazar las grasas trans en las formulaciones de los alimentos empleando distintas estrategias: el uso de materias grasas mas saludables o la formación de geles proteicos para estructurar los alimentos. Las técnicas que mas habitualmente usamos es rayos x con luz sincrotrón como fuente y técnicas habituales en alimentos como DSC, reolo... Mi campo principal de investigación es la Tecnología de Alimentos. Los distintos proyectos que he dirigido desde el comienzo de mi carrera han tenido como fin reemplazar las grasas trans en las formulaciones de los alimentos empleando distintas estrategias: el uso de materias grasas mas saludables o la formación de geles proteicos para estructurar los alimentos. Las técnicas que mas habitualmente usamos es rayos x con luz sincrotrón como fuente y técnicas habituales en alimentos como DSC, reología, microscopias y NMR de baja resolución. Desde el año 2015 he comenzado a organizar una línea de películas comestibles y biodegradables para empaquetar alimentos. Durante estas investigaciones he colaborado con dos equipos de investigación de Italia y Chile consiguiendo un avance sustancial en el tema.
