Campo de especialización: Biomoléculas presentes en alimentos, en particular proteínas. Me he especializado en el estudio de la interrelación estructura - propiedades fisicoquímicas - función de estas moléculas. He analizado tanto propiedades tecno-funcionales (propiedades de hidratación, reológicas, derivadas de la interacción proteína-proteína, y relacionadas con las propiedades de superficie de la molécula), así como propiedades biológicas (antihipertensiva, antiproliferativa, antioxidante, ... Campo de especialización: Biomoléculas presentes en alimentos, en particular proteínas. Me he especializado en el estudio de la interrelación estructura - propiedades fisicoquímicas - función de estas moléculas. He analizado tanto propiedades tecno-funcionales (propiedades de hidratación, reológicas, derivadas de la interacción proteína-proteína, y relacionadas con las propiedades de superficie de la molécula), así como propiedades biológicas (antihipertensiva, antiproliferativa, antioxidante, antitrombótica, antihipercolesterolémica, inmunomoduladoras).Se utilizan un amplio espectro de técnicas: espectrofotométricas, enzimáticas, cromatográficas, de difracción de luz, microscopía, reológicas, ensayos biológicos in vitro, in vivo y ex vivo y estudios in sílico, entre otras. El conocimiento adquirido en todo este recorrido lo estamos volcando en el desarrollo de matrices funcionales dirigidas a personas normal o con algunas afecciones que requieren de esquemas dietarios particulares.
