Estoy doctorada en el área de química orgánica (CIHIDECAR-CONICET), aprovechando esta formación química me desempeño actualmente en el área de tecnología de alimentos. Aplicando y desarrollando técnicas analíticas para el estudio de fibras vegetales con capacidad antioxidante, polisacáridos de paredes celulares. Trabajo en la búsqueda de nuevas fuentes de fibras vegetales con antioxidantes naturales asociados a partir de residuos agroindustriales para ser aplicadas al desarrollo de nuevos ingredientes/aditivos multifuncionales naturales y de materiales.Otras líneas de investigación: A) Estudio de la biodisponibilidad, efecto antioxidante y anti-inflamatorio de bioactivos naturales. Actividad in vitro de antioxidantes naturales coextraídos, digestión in vitro, modelo intestinal: línea Caco-2. B) Estudiar el efecto de compuestos bioactivos naturales sobre la regulación de NF-kB y AP-1 .
