Conocimientos en gastronomía molecular (GM) que explora los fenómenos que sufren los diversos compuestos orgánicos contenidos en los alimentos durante las transformaciones culinarias. Su campo de acción se basa en investigar y aplicar conocimientos físico-químicas que ocurren en la preparación y procesamiento (incluyendo la cocción)de los alimentos y los fenómenos sensoriales asociados con su consumo. Este conocimiento permite el uso de nuevas tecnologías de gelificación, encapsulación y espumado.
