El Dr. Diego Archaina posee experiencia en el desarrollo de alimentos deshidratados de alta calidad a partir de frutas finas utilizando métodos que permiten obtener una baja tasa de deterioro y un alto nivel de biodisponibilidad de los compuestos bioactivos. Ha utilizado técnicas instrumentales, sensoriales y de análisis de imágenes para el estudio integral de la textura de alimentos.
