Knowledge of the physical and chemical analysis on olives and olive oil among which extraction of polyphenols, fatty acids, tocopherols, sterol, squalene, oil content, turbidity. Evaluation of the acidic and polyphenolic composition using gas chromatography and HPLC. Evaluation of virgin olive oil volatile compounds by headspace solid-phase micro extraction followed by gas chromatography; mass spectrometry.Culture bacteria using submerged fermentation methods. Isolation and purification of polymeric surfactants from bacterial culture, and selection of the most appropriate separation methods. Utilization of established methods to characterise the composition and functional properties of the polymeric surfactants. Carry out emulsification, foaming and gelification experiments to characterise polymeric surfactants *Information provided by the agent in SIGEVA
