Composición química, propiedades estructurales, fisicoqímicas, funcionales y bioactivas de proteínas vegetales. Modificación de proteínas mediante tratamiento de hidrólisis enzimática. Formulación de sistemas emulsificados. Procesos de gelificación. Empleo de técnicas espectrofotométicas. Manejo de ingredientes alimentarios para el diseño de productos funcionales y con mejoras del perfil nutricional. Análisis sensorial.
