Durante mi formación de posgrado he adquirido experiencia en la obtención de extractos vegetales, el aislamiento y purificación de proteínas y su caracterización bioquímica y estructural, caracterización cinética de enzimas, búsqueda de actividad inhibitoria de proteasas en extractos vegetales, ensayos de aplicaciones biomédicas de proteasas (actividad fibrinogenolítica, actividad mitogénica, actividad pro-coagulante), aplicación de proteasas para obtener hidrolizados de proteínas alimentarias,...
Durante mi formación de posgrado he adquirido experiencia en la obtención de extractos vegetales, el aislamiento y purificación de proteínas y su caracterización bioquímica y estructural, caracterización cinética de enzimas, búsqueda de actividad inhibitoria de proteasas en extractos vegetales, ensayos de aplicaciones biomédicas de proteasas (actividad fibrinogenolítica, actividad mitogénica, actividad pro-coagulante), aplicación de proteasas para obtener hidrolizados de proteínas alimentarias, búsqueda de actividad biológica (antioxidante) en los hidrolizados y determinación de propiedades funcionales de proteínas. Además participé activamente de proyectos de investigación relacionados con la aplicación de proteasas en el desarrollo de quesos de pasta blanda, así como otras enzimas hidrolíticas en varios alimentos.
