A lo largo de mis años de investigacióna me he orientado al estudio del comportamiento reológico y microestructural de matrices biopoliméricas aplicadas en la industria alimentaria, complementando las propiedades mecánicas requeridas con los cambios introducidos que conlleven a mejoras nutricionales o adaptación a regímenes especiales. Los campos de aplicación estuvieron orientados productos farináceos libres de gluten, emulsiones alimentarias de bajo contenido lipídico, microemulsiones, nanoemulsiones, hidrogeles, oleogeles, matrices cárnicas, aprovechamiento de subrpoductos de la industrialización de legumbres (aquafaba) y productos subexplotados como macroalgas marinas, entre otros.
