Manejo de equipamiento de laboratorio, básico y específico (espectrofotómetro, cromatógrafo Äkta Purifier, equipo de isoelectroenfoque y electroforesis).Estudio de proteasas de hongos y su empleo para la trasformación de subproductos o desechos industriales con diversas aplicaciones.Obtención de extractos proteolíticos a partir de material vegetal y fúngico.Caracterización de extractos: actividad enzimática (caseína, azo-caseína y sustratos sintéticos), constantes cinéticas, contenido proteico (Bradford, Lowry, Hull).Obtención de hidrolizados de proteínas alimentarias.Caracterización de perfiles peptídicos de hidrolizados.Determinación de actividad antioxidante (ABTS, ORAC, método del betacaroteno) y antihipertensiva (inhibición de la ECA).Diseño de técnicas cromatográficas (intercambio iónico, exclusión molecular) para purificación de proteínas y evaluación de perfiles peptídicos.Análisis de datos de espectrometría de masas (MALDI-TOF, ESI-Orbitrap) mediante bioinformática.
