El estrés oxidativo que ocasiona condiciones patológicas se controla por el sistema de defensa antioxidante. Los antioxidantes (AOs) exógenos, compuestos químicos que modulan el daño oxidativo en el cuerpo humano, pueden consumirse a través de alimentos o en formulaciones orales que se presentan principalmente en forma de polvos y cápsulas. El objetivo general de este plan de investigación es el desarrollo de cápsulas veganas a partir de almidón con el propósito de mejorar, maximizar, potenciar y mantener las propiedades antioxidantes de diferentes polvos de alimentos, provenientes de las pérdidas y desperdicios alimenticios (PDA) de la industria frutihortícola. El control de calidad de los productos encapsulados se llevará a cabo empleando métodos analíticos convencionales e innovadores. Cabe destacar que, la presente propuesta se enmarca dentro del Desafío 2 del Plan Nacional de Ciencia, Tecnología e Innovación 2030.
