Durante mi formación de posgrado he adquirido experiencia en la obtención de extractos vegetales, el aislamiento y purificación de proteínas y su caracterización bioquímica y estructural, caracterización cinética de enzimas, búsqueda de actividad inhibitoria de proteasas en extractos vegetales, ensayos de aplicaciones biomédicas de proteasas (actividad fibrinogenolítica, actividad mitogénica, actividad pro-coagulante), aplicación de proteasas para obtener hidrolizados de proteínas alimentarias, búsqueda de actividad biológica (antioxidante) en los hidrolizados y determinación de propiedades funcionales de proteínas. Además participé activamente de proyectos de investigación relacionados con la aplicación de proteasas y otras enzimas hidrolíticas en el desarrollo de alimentos. *Information provided by the agent in SIGEVA
