Mi campo de trabajo se basa en cereales, particularmente en el trigo, estudiando como afecta el genotipo y el ambiente los componentes no proteicos de dicho cereal. Estudio el contenido de proteina, pentosanos solubles y totales tanto en harina integral como harina blanca. Ademas determino el contenido de amilosa de los diferentes cultivares de trigo, y el comportamiento del almidon mediante tecnicas como DSC o RVA. Determino el contenido de minerales y la biodisponibilidad de dichos minerales en productos panificados y pastas. En todos los casos citados evaluo como se ven afectados por el genotipo y el ambiente. *Information provided by the agent in SIGEVALines of Investigation
