El estudio de estas tecnologías involucra desde aspectos microbiológicos, hasta propiedades reológicas, ópticas, antioxidantes, micro y ultraestructura de los tejidos vegetales. Actualmente se incorporó una nueva línea de investigación sobre el uso de agentes de control biológico en combinación con luz UV-C para reducir el deterioro fúngico de frutillas.
