The behaviour of sorbic acid solutions in model systems comprised of sodium chloride solutions (water activity 0.95 and 0.98) at pH 5.0 and 6.0 was studied. Sorbic acid destruction could be described by first order kinetics. Sodium chloride effect on sorbic acid destruction seemed to be related to salt concentration in solution
