Desarrollo mis investigaciones en el área de la preservación de alimentos, aplicando tratamientos no térmicos y antimicrobianos naturales. En los últimos años, he trabajado en la revalorización de productos hortícolas subutilizados, particularmente hojas de remolacha, de apio, de brócoli. He realizado estudios orientados al desarrollo de nuevos productos, que resulten atractivos para los consumidores actuales, conteniendo subproductos hortícolas de alto valor nutricional y funcional. He explorado diversas alternativas de preservación para los productos desarrollados, incluyendo el uso de atmósferas modificadas, la aplicación de antimicrobianos naturales, el uso de altas presiones hidrostáticas, ultrasonido, irradiación gamma y UV-C. *Information provided by the agent in SIGEVA
