Doctor en Ciencias Biológicas. Especialista en biocatálisis y enzimas carbohidrato-activas; producción y purificación de proteínas recombinantes en E. coli; e inmovilización enzimática sobre soportes nanoestructurados y matrices poliméricas. Foco en biopolímeros (de origen microbiológico y de biomasa vegetal) y biopelículas biodegradables y/o activas para el empaque inteligente de alimentos, incorporando compuestos naturales (propóleo y aceites esenciales) y nanomateriales (ZnO, AgNPs, GdFeO₃, polímeros impresos molecularmente) para funciones antimicrobianas/antioxidantes y monitoreo biológico. Amplia experiencia en HPLC y HPAEC-PAD para perfiles de mono-/oligosacáridos; caracterización enzimática y desarrollo de ingredientes con potencial prebiótico.
