Su trabajo se centra en el desarrollo y aplicación de enzimas microbianas, particularmente alfa-galactosidasas, para mejorar la calidad nutricional y funcional de concentrados proteicos de leguminosas y otras matrices alimentarias. Cuenta con amplia experiencia en la industria alimentaria, habiéndose desempeñado durante más de 10 años en el área de control de calidad e investigación y desarrollo. Previamente, participó en proyectos de investigación orientados a la optimización de alimentos de bajo contenido glucídico, estudiando interacciones entre aditivos e ingredientes. Ha sido beneficiaria de becas de investigación (estímulo y doctoral) y ha contribuido a la producción científica con publicaciones en revistas con referato y capítulos de libro. -
