Desarrollo mis actividades de investigación en el área de postcosecha de hortalizas, optimización de procesamiento no térmico para la extensión de vida útil y modelado de la evolución de parámetros de calidad (microbiológica, nutricional, fisiológica, físico/química y sensorial) durante el almacenamiento bajo condiciones diversas. Así mismo desarrollo una línea de investigación orientada a la revalorización de subproductos generados en la cadena agroalimentaria principalmente a través de dos estrategias: desarrollo de nuevos productos (hortalizas refrigeradas mínimamente procesadas y batidos vegetales) conteniendo recursos subutilizados estabilizados por tecnologías no térmicas y antimicrobianos naturales, y por otro lado, extracción de compuestos bioactivos (polifenoles y betalaínas) a partir de estos recursos utilizando ultrasonido como tecnología de asistencia. *Information provided by the agent in SIGEVA
