Caracterización de proteínas vegetales mediante el empleo de herramientas de proteómica. Caracterización bioquímica de enzimas mediante el empleo de técnicas espectrofotométricas y fluorométricas. Cinética enzimática y de inhibición. Producción de péptidos bioactivos y evaluación de actividad biológica in vitro. Clonación y expresión de proteínas en sistemas bacterianos, levaduras y plantas. Purificación de proteínas vegetales y recombinantes. Cultivo de tejidos vegetales.
