Me encuentro realizando el Doctorado en Ingeniería con mención en Ciencia y Tecnología de Alimentos de la UNER. Mi lugar de trabajo es el ICTAER UNER-CONICET y formo parte del equipo de trabajo DyMACRER - Desarrollo y Mejoramiento de Alimentos de Calidad a partir de Recursos de Entre Ríos dirigido por la Dra. Natalia Sosa. Me especializo en temáticas relacionadas con el aprovechamiento de recursos autóctonos de origen vegetal, especialmente del fruto nativo Butia yatay. Las actividades se centran en la caracterización fisicoquímica, nutricional, funcional y sensorial; además del desarrollo de nuevos ingredientes y alimentos a partir de la utilización de la fruta y sus subproductos. *Information provided by the agent in SIGEVA
