En España, realicé mi Doctorado en el Instituto de Investigación en Ciencias de la Alimentación (CIAL, CSIC-UAM). En Ecuador, fui Docente Investigador PhD en la Facultad de Ciencia e Ingeniería en Alimentos (FCIAL, UTA), liderando proyectos Junior. En Argentina, fui responsable de un PICT Joven y PIP Aplicados. También codirigí tesis doctorales y de fin de carrera. Mi formación me permitió profundizar en compuestos bioactivos y optimización de procesos con tecnologías de intensificación (ultrasonidos y microondas). Durante mi posdoctorado, investigué recubrimientos bio-basados para deshidratación de frutas, incorporando visión artificial. Me especialicé en visión computarizada e inteligencia artificial en la UNLP, UBA y UTN. Actualmente, investigo técnicas de visión computarizada y aprendizaje automático para monitorear la calidad en la deshidratación de alimentos, usando modelos clásicos, de ensamble y aprendizaje profundo.
