Investigacion en el área de Alimentación y nutrición, principalmente en tecnologia de los alimentos a travez del desarrollo de un alimento funcional, mediante el aprovechamiento de subproductos de la industria alimenticia. Aplicando tecnicas de laboratorio tales como, deteccion de antioxidantes, manejo de cultivos celulares continuos (celulas Vero), pruebas de citotoxicidad mediante rojo neutro y reduccion de MTT, y Elisa para deteccion de citoquinas.
