Durante el desarrollo de mi Tesina de Grado y Tesis Doctoral, me especialicé en el aislamiento, purificación y caracterización de péptidos y proteínas de origen vegetal y subproductos agroindustriales (chía, lino, sésamo). Trabajé en la caracterización bioquímica de inhibidores de proteasas: cinéticas de inhibición, estabilidad térmica y al pH. Participé en la inmovilización de proteínas, técnicas cromatográficas, electroforesis, actividades biológicas (antioxidante, anticoagulante, antihiperte...
Durante el desarrollo de mi Tesina de Grado y Tesis Doctoral, me especialicé en el aislamiento, purificación y caracterización de péptidos y proteínas de origen vegetal y subproductos agroindustriales (chía, lino, sésamo). Trabajé en la caracterización bioquímica de inhibidores de proteasas: cinéticas de inhibición, estabilidad térmica y al pH. Participé en la inmovilización de proteínas, técnicas cromatográficas, electroforesis, actividades biológicas (antioxidante, anticoagulante, antihipertensiva), mantenimiento de cultivos celulares, actividades antimicrobianas. Me especialicé en la hidrólisis enzimática, producción y caracterización de hidrolizados proteicos y sus aplicaciones biotecnológicas. Me dediqué a la producción de panificados fortificados con hidrolizados proteicos y evaluación de propiedades texturales, colorimétricas y sensoriales. Publiqué 5 trabajos científicos en revistas de alto impacto internacional, 16 comunicaciones en eventos C-T, 1 nota periodística realizada por la UNLP Investiga y 3 entrevistas en radios
