En los últimos 9 años he dedicado mi formación profesional al desarrollo y formulación de alimentos a base de harina de algarrobo proveniente del NOA, y a la caracterización química y microbiológica de una bebida fermentada artesanal (aloja) típica de la misma región. Gracias al uso de esta matriz pude entrenarme en técnicas tanto del análisis de alimentos como biotecnológicas dentro y fuera del país. Mi formación como ingeniero agrónomo y las nuevas herramientas obtenidas durante el trabajo de tesis doctoral hacen que pueda abordar toda la cadena productiva de alimentos, desde su cultivo, poscosecha, transformación y agregado de valor.
