Empleo de estas enzimas en la coagulación de la leche y en la preparación de hidrolizados de proteínas alimentarias. Obtención y purificación de péptidos bioactivos a partir de los hidrolizados, con actividad antihipertensiva, antimicrobiana, quelante de metales y antioxidante.
