Se trabajará en el marco de una Beca CONICET para realizar una tesis doctoral basada en el estudio y desarrollo nuevos alimentos más naturales y seguros, mediante la aplicación de métodos de preservación que maximicen la seguridad y minimicen el deterioro de su calidad nutritiva y sensorial.
